Stop Order on page load

I'm populating my table from records in a database. Order by surname but printed firstname lastname.

On page load datatables is reordering by firstname being alphabetical. is there a way to stop this unless the user records it?

Use the order option to set the initial table order. There is an example of this in the docs.
